Bounty style cake, took this to my mom's house for Saturday morning coffee, and of course mom added her magic touch with the roses and the nice pic ❤☕❤ For the Coconut "crust" -7 egg whites (I usually freeze the yolks or use for something else, this time I used them in a challah bread I baked) -3/4 cup of agave (can use sweetener of choice) -1 cup shredded unsweetened coconut
-400 ml Heavy cream
-1 cup milk of choice
-1 packet of any sugar free vanilla instant pudding
-200 gr. Bittersweet chocolate (I use 60-70% cocoa, whatever I get my hands on) -3/4 cup of heavy cream
Beat the egg white till they are firm and fluffy. Add sweetener and coconut and fold gently.
Grease a round 9inch pan, and bake at 350f until golden light brown.
Once crust is ready, allow to cool completely, then prepare the cream. Whip the heavy cream, then add the vanilla instant pudding and milk.
Spread all the cream over your coconut crust, put in the fridge to cool. And prepare the chocolate ganache. Let it cool before pouring on cream, or the cream will melt. If the ganache is too thick add cream or milk to dilute a little.
Please note- for sweeteners I sometimes use stevia for baking, but it will not be completely refined sugar free. Also, I buy my unsweetened shredded coconut from eastern Mediterranean stores in my area. Its shredded really thin and its dryer, so the crust is lighter in texture. But the unsweetened shredded coconut that are sold in local supermarkets work good too, I just happen to prefer the other kind.
